Chicken Tortilla Soup

This awesome soup is healthy and easy to make!  This recipe makes one large pot of soup, but it keeps well in the fridge so I make the whole thing and enjoy the leftovers. 

This is a brothy soup so serve it up Cafe Rio style with chips, guacamole, extra lime juice, etc....

Chicken Tortilla Soup


Ingredients
3 large chicken breasts, boiled & shredded
1 tsp. oil
1 onion, chopped
1/2 tsp. minced garlic
1 tsp. ground cumin
8 cups chicken broth
1 can corn (drained)
1/2 tsp. chili power
2 Tbsp. lemon or lime juice--I add both
1 1/2 cups salsa

*Every time I make this I think black beans would be so good with this.  If you like black beans, throw a can in as well :)

Directions
In a large pot add oil and cook both the onion and garlic until the onions become clear.  Add cumin.
Add chicken broth and give a good stir.
Add shredded chicken, corn, chili powder, lemon juice, lime juice and salsa.  Bring to a boil.
Reduce heat and simmer 30-40 minutes.
Top with chips, cheese, avocado and sour cream.
