Dinner Idea

Sometimes you just need a dinner idea and this is just that. Not a special recipe--just an idea.

When Tony and I were newly married (we're still newly married, but I mean "newly" married for us :) ) He asked me if I would start making something other than chicken haha.  I did all the grocery shopping and hadn't figured out a way to have a meat variety without spending lots of money.  Now I buy a big bag of chicken one trip.  The next trip I still have chicken left, but buy a big thing of beef.  Next trip I have both of those meats left and I buy a fish, etc.  I try to rotate everything evenly so I have lots of different options while only buying one kind of meat at a time.  It takes a while to stock up but once you do, you'll always have several options. Right now in my freezer I have chicken, ground beef, tilapia, salmon, meatballs. Anyways, shopping like this works for us and maybe it will work for you.

Salmon with rice and roasted asparagus

My favorite way to eat salmon is the most simple way you can...
Directions:
With a paper towel, pat dry each fillet.
Generously sprinkle each side with kosher salt and pepper.
Heat a frying pan over med-high heat and drizzle with olive oil.
(make sure the fish sizzles when you put it in the pan so you get a nice crust)
Cook each side for a few minutes.

It's simple and only takes a minute to prepare!
