Individual Meat loaves

One thing I dislike about cooking for two is having to figure out the math for certain recipes.  This recipe is Ina Garten's and it is delicious!  However, her recipe is for 6 servings (6 small meatloaves).  I did my best to adapt the recipe for 2 people.  Click here for the original recipe.

Individual Meat Loaves 

Ingredients
1 small yellow onion, chopped
1/2 teaspoon salt (kosher)
1/4 teaspoon black pepper
1 tablespoon worcestershire sauce
1/4 cup chicken broth
1 Tbsp. ketchup
1 pound ground beef
1/4 cup italian seasoned breadcrumbs 
1/2 beaten egg


Directions

Preheat oven to 350 degrees.  

Heat a little oil in a medium sized saute pan.  Add onions, salt & pepper and cook over medium-low heat, stirring occasionally, until the onions are translucent but not brown (8-10 min).
Off the heat, add the Worcestershire sauce, chicken broth and ketchup.  Allow to cool slightly.  

In a large bowl, combine the meat, onion mixture, bread crumbs and beaten egg.  Mix lightly with a fork.  
Divide mixture into 2-3 portions and shape each portion in a small loaf.   
Place loaves on a baking sheet and spread ketchup (or bbq sauce if you want) over the tops. Bake for 40-45 minutes. 

*This recipe made 3 meatloaves when I made it. (2 individuals and one mini)
